Recipe of the week
With fall upon us, I thought it would be great to add a recipe that has the in season vegetables.
Butternut Squash Curry with Chickpeas
Ingredients
1 medium butternut squash, peeled and diced
1 can (15 oz) chickpeas, drained and rinsed
1 onion, chopped
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 can (14 oz) coconut milk
1 cup vegetable broth
2 tablespoons curry powder (adjust to taste)
1 teaspoon turmeric
Salt and pepper to taste
2 tablespoons olive oil
Fresh cilantro for garnish (optional)
Instructions
Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes). Stir in the garlic and ginger, cooking for another minute until fragrant.
Add Spices: Sprinkle in the curry powder and turmeric, stirring to coat the onions. Cook for about 30 seconds to release the spices' flavors.
Cook Squash: Add the diced butternut squash to the pot and stir well. Pour in the vegetable broth and coconut milk. Bring the mixture to a boil.
Simmer: Reduce the heat to low, cover, and let it simmer for about 20 minutes or until the squash is tender.
Add Chickpeas: Stir in the chickpeas and cook for an additional 5 minutes to heat through. Season with salt and pepper to taste.
Serve: Garnish with fresh cilantro if desired. Serve hot over rice or quinoa.
